Pithy, intense, and struck match scented, it's a white that has elements of Sauvignon Blanc and Riesling, all greengage, lime and grapefruit complemented by 50% new wood, wet stone and gunflint intensity and a lingering finish. In the winery we did whole bunch pressing straight to first and second fill French Oak Barrels, without any additions – natural fermentation started slowly after five days and completed in 30 days after which the wine spent 10 months on the gross lees before preparing (with minimum intervention) for bottling. The lees was stirred occasionally and no malolactic fermentation took place in barrel. The result is an honest wine and true to the king of white wines - Chardonnay – reflecting where it comes from.

This Sutherland Chardonnay comes from some of the most secluded vineyards in South-Africa. These vineyards are also the highest, growing on the Roggeveld escarpment at 1500 meters above sea level. It is here, 20 years ago that my dream to make a wine from a place where at night you can almost pick the stars by hand, so bright and pure is the atmosphere, where dreams are still realized in God’s most perfect timing, not ours, began.
