Grenache Brut

Pancakes with berries, duck, Thai dishes or goat's cheese.

Made from 100% Grenache Noir grown as high-density bush vines on schist soils, with vines over seven years old and yields of approximately eight tons per hectare.

After fermentation, the wine receives a low dose of sulphur and remains on the lees in stainless steel for four months. It is then sweetened and carbonated with added CO₂ before bottling.

Fruit is picked early for natural acidity and lower alcohol, hand-harvested and cooled overnight at 5°C. After crushing and destemming, two to three hours of skin contact creates the salmon colour. The juice settles for 48 hours at 8°C in stainless steel and ferments at 13°C for 18 days.
