Fruit is handpicked in the early morning and cooled overnight. One component is harvested at 21° Balling for freshness and length, while a riper component is picked at 23° Balling for body and flavour.

Left on the lees after fermentation and matured for a total of nine months in 300L French oak barrels before blending and bottling.

After crushing and destemming, free-run juice settles for 24 hours at 8°C in stainless steel. It is then racked to 300L French oak barrels, 20% new with the balance older barrels, where fermentation can take up to three months.
