The wine was made using wild fermentation, a method that enhances complexity. The Sauvignon Blanc grapes were hand-picked and whole-bunch pressed. Fermentation took place in 500L French oak barrels (second and third fill), where the wine aged for 11 months before being blended and spending an additional 3 months in stainless steel​.
