Iona’s vineyards are located 420 meters above sea level in Elgin, one of South Africa’s coolest vineyard sites. The long growing season allows for slow ripening, resulting in concentrated flavors and balanced acidity. The grapes come from two terroirs: warm, ripe Syrah from the Brocha vineyard, and cool, fresh Cabernet Sauvignon and Merlot from higher-elevation vineyards​.

The winemaking process is traditional. The grapes are hand-harvested and sorted, followed by wild fermentation. The wine undergoes extended maceration to achieve the desired extraction, followed by spontaneous malolactic fermentation in 500L French oak barrels. It is aged for 12-16 months, with 25% new oak, enhancing the wine’s structure and complexity​.
