Sauvignon Blanc

Would go well with any seafood dish, creamy chicken dishes or just a simple salad.

The 2021 vintage started about 2 weeks later and ended well into April due to the slow ripening season. This resulted in grapes full of natural acid and amazing flavours. Low alcohol fermentations resulted in wines with a lot more finesse and elegance. This wine is made from Stellenbosch bush vines found on the Devon valley south facing slopes and Elgin grapes that keeps its natural acidity. Soils are decomposed granite with patches of sandstone.

After fermentation wine was left on the lease for an extra couple months with the occasional stir to suspend the lease into the wine. Wine is racked off lease unfiltered and unfined into bottle.

Grapes were handpicked at optimal ripeness during the early hours of the morning. It was destemmed and given skin contact in the press. This action gives the juice more tannin structure. Fermented was in stainless steel tanks at cool temperatures to increase the fruit flavour compounds in the wine.

To honour the original farm, our lifestyle range of wines bears the Dombeya name. The Dombeya tree, native to South Africa, has extraordinarily beautiful flowers which herald in South Africa’s spring season. Dotted around our vineyards these trees embrace the cycle of regeneration and renewal, a fitting symbol of modern-day South Africa. Our Dombeya portfolio consists of 5 wines; a varietal range of Merlot, Chardonnay and Sauvignon Blanc, and a Reserve range with Boulder Road Shiraz and the Bordeaux-style Fenix.
