Domaine P & M Jacqueson
Domaine Jacqueson consists now of 18 hectares of vines, mostly in Rully, but also 5 in Mercurey and some in Bouzeron. The grapes are harvested by hand and vinified in classical fashion, before an élevage in barrel (up to 25% new wood). Under Paul, and now by his children, Marie and Pierre, the domaine has become adept at a sophisticated use of barrels, the élevage here is key to the quality they consistently achieve, and this rubs off on the négociant 'Cuvée Sélection' which is always beautifully finished.
Description
Bouzeron “Les Cordères” comes from vines planted in 1937 on a northwest-facing slope just south of the village of Bouzeron. The local clonal variety (Aligoté dorée) differs from the typical Aligoté grown on the Côte d’Or, with a yellow skin as opposed to green, and is typically “sweeter” at harvest. The vineyard’s indirect exposure to the sun throughout the growing season ensures the grapes a long, slow maturation, which is ideal for an early-ripening variety like Aligoté. The resulting wine is stony and structured, with underlying ripe fruit flavours of yellow citrus and green apple.
Food Pairing
Roasted flounder and baked halibut with herb butter has been delicious with this wine. It's also wonderful with creamy cow-milk cheeses.
