Risotto with sea scents. Despite its young age, it goes very well with a platter of aged cheeses.

Julien Mareschal of Domaine de la Borde makes some of the most enchanting Jura wines we have come across, though sadly the quantities available are miniscule. Julien has 5 hectares of vines on the slopes of the most prestigious Jura appellation of Pupillin and his are some of the highest at up to 550m above sea level.

Aging on lees for 20 months.

Manual harvest, partial destemming (50%), static cold settling (10 ° C) from 12 to 24 hours, alcoholic fermentation in lightning (600L to 1500L)

Julien Mareschal like several of the young vignerons in the Jura was not born into a vine-owning family. In Julien’s case he came to the Jura at the age of 23 from an agricultural family after studying agronomy and then oenology at Dijon. He now has 5 hectares of vines in and around Pupillin some at the highest elevations (550 meters) and all his vines are organic or in conversion to biodynamic.
