Julien Mareschal like several of the young vignerons in the Jura was not born into a vine-owning family. In Julien’s case he came to the Jura at the age of 23 from an agricultural family after studying agronomy and then oenology at Dijon. He now has 5 hectares of vines in and around Pupillin some at the highest elevations (550 meters) and all his vines are organic or in conversion to biodynamic.
Description
Golden yellow with bright reflections. The intense aromas of daisies, peony, medicinal herbs, cedar peel and lime go hand in hand with a delicate and studied oxidation. The sip is snappy, it does not linger but rather flows pleasantly leaving behind a salty and almost balsamic trail, now vegetable, now ethereal. It concludes dynamically and with great depth.
Food Pairing
Risotto with sea scents. Despite its young age, it goes very well with a platter of aged cheeses.
