Dolcetto

A dark-skinned varietal grown in the hills of North- West Italy in the Piedmont region. Many Dolcetto wines hold DOC and DOCG status although considered as a poor cousin to the Nebbiolo and Barbera cultivars. And so is often grown on cooler, more elevated sites where the other cultivars would otherwise struggle. Wines produced are deep in colour, low in acid and high in tannin, the expression of which is successfully discouraged by a short-gentle fermentation and avoiding over-extraction.
