Sauvignon Blanc

After harvesting, the grapes were given 6 hours of skin contact to extract flavor, followed by fermentation at 14°C for 22 days. The wine then underwent 80 days of lees contact to enhance body and complexity before being blended, stabilized, and bottled​.

The Sauvignon Blanc vines are located on the Western slopes of the Tygerberg Hills, just 7 kilometers from the Atlantic Ocean. This proximity to the sea helps the vines benefit from cooling maritime breezes. The vineyard sits at 200 meters above sea level and is planted in well-drained blue shale soils, with yields of 7 to 8 tons per hectare​.

The wine can be enjoyed now, but it also has the potential to develop richer flavors over the next 3 to 4 years​.
