Delice Nectar

We recommend it as the perfect enhancer to Asiatic cuisine, spicy food and chocolate cheesecake.

A special assemblage of 52% Pinot Noir and 48 % Chardonnay grapes was used to create this wine, from the regions of Franschhoek, Robertson and Elgin. 20% of this blend came from reserve wines from previous vintages, specially selected to enhance its intensity, complexity and constancy.

This wine spends a minimum of 24 months on the lees before de- gorgement, at which stage a slightly more generous amount of liqueur de dosage is added, giving it its unique soft flavour and aroma characteristics.

10% of fermentation was done in french-oak barrels, contributing to the rounded attributes and exotic flavours of this wine.

The first time I set eyes on the mountains of Franschhoek I could never have imagined the future that lay ahead. It was the autumn of 2001 my family and I were looking for a new adventure and we had no doubt that we had found it here in the historic village of Franschhoek. On arrival Chardonnay and Pinot Noir vineyards were planted on the farm however this was just the beginning. The construction of South Africa's first cellar to be solely dedicated to Cap Classique was next. As this was a unique project the cellar is also unique. It was designed with specific attention to detail that allows for the production and maturation of the very best bottle-fermented sparkling wines. On completion of the cellar building in 2005 the farm was ready for its first harvest in 2006. We released our first classic Colmant style bubbly in 2008 and have never looked back. Today we produce Cap Classique wines across six different blends all of which are featured on our Cap Classique collection page.
