The first time I set eyes on the mountains of Franschhoek I could never have imagined the future that lay ahead. It was the autumn of 2001 my family and I were looking for a new adventure and we had no doubt that we had found it here in the historic village of Franschhoek. On arrival Chardonnay and Pinot Noir vineyards were planted on the farm however this was just the beginning. The construction of South Africa's first cellar to be solely dedicated to Cap Classique was next. As this was a unique project the cellar is also unique. It was designed with specific attention to detail that allows for the production and maturation of the very best bottle-fermented sparkling wines. On completion of the cellar building in 2005 the farm was ready for its first harvest in 2006. We released our first classic Colmant style bubbly in 2008 and have never looked back. Today we produce Cap Classique wines across six different blends all of which are featured on our Cap Classique collection page.
Description
A subtle pale gold colour with a crystalline clarity. A fresh and delicate lemony scent, combined with the bright aromas of dried apricot and a soft touch of hazelnut. This wine offers ample structure, with a wonderful balance between the refreshing acidity of citrus fruits and the roundness of ripe pear and sun-sweetened apple.
Food Pairing
We recommend it as the perfect enhancer to Asiatic cuisine, spicy food and chocolate cheesecake.
