Blanc de Blancs

Pair it beautifully with delicate seafood dishes such as pan fried scallops, oysters or line fish “au beurre blanc”.

This blend is a beautiful composition of 100% Chardonnay grapes, harvested from carefully selected vineyards in the Franschhoek and Robertson regions, using grapes which would yield the best qualities of finesse, freshness and elegance.

This wine spends the long- est time maturing in our cellar, with a minimum of 45 months on the lees, giving ample time for the maturation of the creamy and brioche characteristics.

Out of the 80% base wines from the current year’s harvest, 15% were barrel fermented, contributing to an exotic dimension of wooded characteristics in the blend. 20% of the composition comes from a special selection of the previous year’s harvest which was kept to mature in prime quality French oak barrels since fermentation, further contributing to the intense complexity and perfect harmony of the wine.

The first time I set eyes on the mountains of Franschhoek I could never have imagined the future that lay ahead. It was the autumn of 2001 my family and I were looking for a new adventure and we had no doubt that we had found it here in the historic village of Franschhoek. On arrival Chardonnay and Pinot Noir vineyards were planted on the farm however this was just the beginning. The construction of South Africa's first cellar to be solely dedicated to Cap Classique was next. As this was a unique project the cellar is also unique. It was designed with specific attention to detail that allows for the production and maturation of the very best bottle-fermented sparkling wines. On completion of the cellar building in 2005 the farm was ready for its first harvest in 2006. We released our first classic Colmant style bubbly in 2008 and have never looked back. Today we produce Cap Classique wines across six different blends all of which are featured on our Cap Classique collection page.
