Vinification in whole bunches in our hillside cellars, whose successive levels allow us to make maximum use of gravity, so as to avoid using either pumps or conveyors for the grapes. Maceration for only 8 days in order to capture all the freshness of the fruit.

On a 5.5 ha eastern slope, on a formation of the first foothills of the central massif with a crumbly pink granite soil containing little organic matter. Two cadoles, one of which from the 18th century attests to the historical quality of this terroir. It is a sector of the appellation that we particularly appreciate, for the Granitic purity and the poverty of its soils which gives racy wines with very elegant fruit flavors. Grass strips and others plowed cut this soil sensitive to thunderstorms, little sensitivity to diseases due to the very draining soil, justifies little treatment during the summer. The harvest is harvested manually and transported in small boxes to respect the qualities of the grape.

Matured for 7 months in cement vats.
