Carignan

Enjoy with a lamb rib chop. The wine is ideal to be enjoyed slightly chilled and will go well with firm cheeses and charcuterie.

10 year old trellised and irrigated single row of vines on well drained red sand and loam mix on a broken hardpan layer. All the grapes were hand picked on the 2nd of March and 20% whole bunch crushed by feet, with the balance destemmed with a small mechanical destemmer into a neutral fermentation vessel.

The wine settled in tank for about 1 week before being aged in two old 300L French oak barrels for 6 months. The wine was not fined nor cold stabilised and lightly filtered at bottling.

The pulp was chilled down with cooling plates submerged into the mash. The wine was naturally co-fermented for about 10 days and pump overs were performed twice daily to daily during the end of the fermentation. The free run juice was racked to tank and the pulp was pressed.

Cape Rock Wines is situated between the towns of Vredendal and Klawer 300km north from Cape Town and 30 km inland from Doringbaai on the West Coast of South Africa. We grow a variety of red and white grapes such as Syrah Grenache Mourvèdre Carignan Cabernet Sauvignon Grenache Blanc Roussanne Marsanne Viognier and Colombard. The vineyards are located on a single 11-hectare farm just above the banks of the Olifants river floodplain.
