Cabernet Sauvignon

The wine is ideal to be enjoyed on its own in winter or slightly chilled in summer evenings and will go well with firm cheeses, charcuterie, lamb or game dishes.

22 year old trellised and irrigated vineyard, Spruitdrift area, Olifants River, West Coast, South Africa.

The wine settled in tank for 8 weeks before being aged in old 300L French oak barrels for 12 months. The wine was racked from barrel two weeks prior to bottling without cold stabilisation and with a light filtration at bottling.

All the grapes were hand picked and destemmed with a small mechanical destemmer into neutral fermentation vessels. The pulp was chilled down with cooling plates submerged into the mash. The wine was naturally fermented for about 14 days and pump overs were performed twice daily to daily during the end of the fermentation. The free run juice was racked to tank and the pulp was pressed.

Cape Rock Wines is situated between the towns of Vredendal and Klawer 300km north from Cape Town and 30 km inland from Doringbaai on the West Coast of South Africa. We grow a variety of red and white grapes such as Syrah Grenache Mourvèdre Carignan Cabernet Sauvignon Grenache Blanc Roussanne Marsanne Viognier and Colombard. The vineyards are located on a single 11-hectare farm just above the banks of the Olifants river floodplain.
