The grapes for this wine are sourced from select vineyards in the Stellenbosch and Paarl regions, known for their suitability for growing Rhône varietals like Shiraz and Mourvèdre. These vineyards are planted on well-drained soils composed of granite and shale, which contribute to the wine’s mineral character and complexity. The Mediterranean climate, with its warm days and cool nights, allows the grapes to ripen slowly, developing intense flavors and retaining natural acidity. Sustainable farming practices are implemented to ensure the health of the vineyards and the quality of the fruit.

After hand-harvesting, the grapes are carefully sorted and destemmed. Fermentation takes place in stainless steel tanks, allowing for controlled temperature to preserve the fresh fruit character. During fermentation, gentle extraction techniques such as pump-overs and punch-downs are used to enhance color, flavor, and tannin structure.
