A light and cloudy claret colour in the glass. Aromas of rose petal, red apple skins, red raspberry and cherries, with whiffs of wild rosemary and boegoe enticing the nose. A palate of ripe wild berries and hints of lavender, with a mannered amount of earthy funk on the finish.

Whole bunches were placed at the bottom of barrels with cut out panels. The rest of the barrels were filled with crushed grapes with a peristaltic pump. The wine was left to ferment naturally with only the wild yeast present on the skins to start alcholic fermentation. During fermentation the skins were pressed down into the fermenting juice a couple of times a day with bare hands and feet. After alcoholic fermentation, the barrels were toppedandsealedfor7months. The cold winter temperatures and gravity allows for the wine to clarify itself with most of the skins, stems and pips collecting at the bottom of the barrel. Inspiring, the wine was basket pressed gently followed by a series of settlings and rackings before the wine was bottled. The wine was bottled unfined and unfiltered as is visible by the slight haziness in the glass.

In 1693, the first vineyards were planted at the top of Bloemkoolfontein farm, today known as Fairview. Over the years, we’ve reinvested our efforts back into the land, replanting vines that suit the soils and expanding our vinicultural horizons every step of the way. Needless to say, this cultivated investment has yielded world class wine. Yet it’s also done something else. Something even more special. Behind closed cellar doors, and with access to handpicked parcels and rare varieties, our winemakers’ have had the vanguard freedom to push the boundaries and refine their craft. The result is Bloemcool – an esoteric, age-worthy wine that brims with elegance and tales to tell. We’ve even embraced our heritage by repurposing past bottles and hand-making labels that are implanted with real cauliflower seeds, encouraging the new keeper of the wine to let the story of Bloemcool perpetually live on.
