The blend is comprised of bush vine Cinsaut (95%) sourced from the slopes of the Darling hills, planted on sandy, decomposed granite soils at approximately 204 meters above sea level, with a modest 5% contribution from a neighboring Shiraz vineyard.

The wine spends eight months in older oak vessels, which impart subtle texture and allow gentle oxygen interaction without overshadowing the fruit’s natural perfume and freshness.

The grapes are hand-harvested at optimal ripeness, cooled overnight to 4 °C, then partially de-stemmed and fermented in open-top fermenters. The fermentation includes a mix of whole-bunch and de-stemmed bunches and proceeds spontaneously using indigenous yeasts. The wine remains on the skins as long as possible to extract texture and color. It then matures for eight months in older oak before being blended and bottled.

BLANKbottle has broken just about every mould there is with close to 40 different wines produced every year and almost half of them never to be repeated. No label bares information about grape varietal(s) or blend. It all started in 2004 when a lady came to Pieter to buy some wine and asked for anything but Shiraz. “I don’t drink Shiraz” were her exact words. Pieter poured her a glass of wine. She loved it and bought 3 cases. It was 100% Shiraz. Pieter says: “It’s true, we do judge a book by its cover”. This is why Walser only indicates whether the bottle is red or white – he never gives mention to the grape varietal(s). “I want nothing on my labels”.
