Moment Of Silence

This versatile wine pairs well with complex dishes featuring both fish and white meats. It also complements aged hard cheeses. Serving temperature: 12°C.

The grapes for this blend are sourced from multiple vineyards in Wellington: Boberg: A bush-vine Chenin Blanc vineyard situated on the top of the Groenberg mountain in decomposed granite soils. This previously neglected vineyard has been revitalized and is transitioning to organic farming practices. Hangbal: An old bush-vine Chenin Blanc vineyard located on the lower northern slopes of the Groenberg, planted on "Koffieklip" soils. Taaiboslaagte: A conventionally farmed Viognier vineyard contributing to the blend.

The wine was aged for eight months on the lees in a mix of concrete egg-shaped tanks, amphorae, and older French oak barrels before blending and bottling.

After harvesting at optimal ripeness, the grapes were cooled overnight to 4°C. The following day, they were whole-bunch pressed, and the juice underwent spontaneous fermentation with indigenous yeasts in a combination of concrete egg-shaped tanks, amphorae, and older French oak barrels. The wine remained on the lees for eight months before blending and bottling.

BLANKbottle has broken just about every mould there is with close to 40 different wines produced every year and almost half of them never to be repeated. No label bares information about grape varietal(s) or blend. It all started in 2004 when a lady came to Pieter to buy some wine and asked for anything but Shiraz. “I don’t drink Shiraz” were her exact words. Pieter poured her a glass of wine. She loved it and bought 3 cases. It was 100% Shiraz. Pieter says: “It’s true, we do judge a book by its cover”. This is why Walser only indicates whether the bottle is red or white – he never gives mention to the grape varietal(s). “I want nothing on my labels”.
