The mutation of Semillon to Semillon Gris remains a mystery – one year the grapes will be white, the following year they’ll transform and shapeshift to be red in colour. The label displays alternative shading on the helix, each strand is different in colour, due to the mutation of Sémillon to Sémillon Gris. Look closer… the strands of the Helix are made up of bones.
