The Reserve Collection Cabernet Sauvignon

Beef, Lamb, Poultry

A better winter after three dry winters didn't prevent a tiny crop and gradual ripening. Tiny berries allowed the production of wines with highly concentrated varietal character.

The wine matured in 60% new and the rest 2nd fill barrels for 24 months.

The grapes were harvested at 24.5°B, the juice spent 24 hours on the skins before inoculation. Fermentation took place at 26-28°C. Pumped over daily during alcoholic fermentation. Malolactic fermentation took place in French oak barrels.

Bellevue Wine Estate, a family-owned estate with over 200 years of winemaking heritage, proudly pioneered one of South Africa’s first commercial Pinotage plantings. Rooted in Stellenbosch's rich viticultural history, we create terroir-driven wines with minimal intervention, crafting each bottle to tell a story.
