Unorthodox Kosher Sauvignon Blanc

After harvest, the grapes undergo cold pressing and settling. The juice is flash-pasteurized at the juice stage (approx. 90 °C), ensuring it turns Mevushal and kosher for Passover. Fermentation takes place in stainless steel tanks at about 14 °C over a 14-day period. Lees stirring is applied for two months, enhancing mouthfeel and aromatic persistence.

Crafted from a vineyard block selection of trellised older vines planted in ancient, weathered granite soils in the Coastal Region. These mature vines contribute density and depth, while the cool maritime-influenced climate preserves vibrant varietal expression.

There is no oak maturation; the wine is designed for immediacy and freshness. Post-fermentation, it is bottled young to preserve aromatic intensities and textural clarity.
