The Pernod brand, established in 1805 by Henri-Louis Pernod, is one of the oldest and most renowned French anise-flavored spirits brands. It originated with the creation of absinthe, a popular drink in 19th-century France, particularly among artists and writers. However, due to concerns about the psychoactive properties attributed to one of its ingredients, wormwood, absinthe was banned in France in 1915.
Pernod has a vibrant yellow hue and offers a clear, brilliant appearance. The primary flavors and aromas include anise, fennel, and a blend of aromatic herbs such as camomile and coriander, giving it a complex and refreshing profile. When water is added, Pernod becomes milky-opaque, a phenomenon known as the ouzo effect, typical of anise-flavored spirits.

The nose of Pernod is quite expressive, featuring waves of anise, fresh garden herbs, carnations, and licorice.
Palate:
On tasting, Pernod presents a potent and somewhat bittersweet flavor profile, dominated by anise and licorice. With water, its texture changes and the licorice notes become more pronounced.
