The uniqueness of our pot malt stills rest in the cylindrical necks of the spirit stills. Traditionally the necks of malt stills are open. The Loch Lomond stills include special distillation trays in the necks, allowing for greater contact with the cooling alcohol vapour. This makes the process more efficient. These stills can produce alcohol up to 90% ABV where normal stills deliver the alcohol at around 70% ABV. This style of still allows for different ‘flavour notes’ to be captured and emphasised through the range of alcohol strengths that can be captured and rejected. This is much more difficult to achieve through a conventional pot still.
This single malt is bottled at 46% ABV and is non-chill filtered to preserve its full flavor profile. It's crafted using a unique combination of Straight Neck and more traditional Swan Neck Stills and aged in three types of American Oak casks—bourbon, refill, and re-charred. This process helps in delivering its signature style, which is both balanced and intricate, making it a great option for those who appreciate a nuanced whisky.
Nose:
The aroma presents an intriguing mix of crisp green apple, ripe pear, and refreshing citrus lemon, complemented by undertones of fig, cranberry, and green apple for a slightly complex yet inviting start.
Palate:
On the palate, this whisky offers a delightful sequence of flavors, starting with a slight punchiness followed by the sweetness of pepper-jam and cooked sugar. It transitions into notes of pear and progresses to a smoky marionberry-and-kelp finish. This profile is enriched with flavors like kiwi fruit, starfruit, and caramel-covered green apples, alongside honey, toffee, cereal, and vanilla, creating a complex and engaging experience.
Finish:
The finish of Loch Lomond 12 Year Old is noted for its short to medium duration, leaving a memorable trace of salty brininess reminiscent of candy by the ocean, with a gentle hint of smoke that lingers subtly.
