Ki No Bi Gin is the first craft gin from Kyoto, emphasizing local traditions in its creation. The gin incorporates botanicals that are emblematic of Japanese cuisine and culture, making it not only a beverage but a representation of Kyoto's rich heritage. The distillery itself is a pioneer in the Japanese gin market, setting a standard for premium craft gins in the region.

KI NO BI Kyoto Dry Gin is known for its clear, fresh aroma characterized by yuzu and a hint of sanshō pepper, evoking the essence of a morning mist in a bamboo forest. The flavour profile is marked by a vivid citrus burst of yuzu and lemon at the onset, which transitions into a sophisticated blend of juniper and spices, including ginger and Japanese pepper. This combination creates a complex, earthy, and herbal medley. The finish is distinctive and spicy, underpinned by the subtle warmth of ginger and the clean, dry touch of gyokuro tea, leaving a balanced and harmonious impression​.

Nose:

The nose offers a robust citrus presence, particularly kumquat and yuzu, accompanied by green tea and pine-forward juniper notes. This provides a clean and somewhat classic gin aroma with a unique twist.

Palate:

On the palate, KI NO BI starts with a strong citrus flavour, followed by a mid-palate evolution into deeper, earthy tones with hints of camphor and a cool, menthol-like quality reminiscent of eucalyptus. This transitions into flavours of ginger, peppercorn, wormwood, and bitter black tea​.

Finish:

The finish of KI NO BI Kyoto Dry Gin is long and exceptionally dry, characterized by a delicate interplay of yuzu, red shiso leaves, and juniper which ties all the flavours together.
