Kingsbarns Distillery, located in Fife, Scotland, was founded in 2014 by Douglas Clement, a former golf caddie who saw the need for a nearby distillery for visitors to the local golf courses. The distillery is housed in a beautifully restored 18th-century farm steading, offering a charming setting for its production facilities and visitor center. Kingsbarns specializes in crafting single malt Scotch whisky using locally sourced barley from Fife. The whisky is distilled in traditional copper pot stills and aged in high-quality casks, including ex-bourbon and shaved, toasted, and re-charred (STR) barriques. Their flagship product, the "Dream to Dram," is known for its smooth, fruity profile, with notes of tropical fruit, vanilla, and malt.
Distilled from barley sourced less than six miles from the Kingsbarns Distillery, our flagship single malt DOOCOT has enjoyed a longer maturation in cask, maintaining balance and developing complexity. Production Director Isabella Wemyss has carefully selected a combination of Ex-Bourbon and STR (shaved, toasted and re-charred) ex-Portuguese red wine casks to mature DOOCOT. Full of sweet, fruity character, DOOCOT is light, intensely fruity, floral and complemented by a rich color coming from the high quality casks it has matured in.
Nose:
Sweet and floral, soft brown sugar with banana cake batter and tropical notes.
Palate:
Pineapple syrup, summer berries and a hint of rhubarb.
Finish:
Kiwi fruit and citrus zest
