Highland Park is a renowned single malt Scotch whisky distillery located in Kirkwall, Orkney, Scotland. It is one of the few distilleries that still uses a traditional malting floor, where malted barley is physically turned by hand. This labor-intensive process contributes to the distinctive flavor of their whiskies. Highland Park is also known for its use of local peat, cut from Hobbister Moor, which imparts a unique heathery peat character to the whisky.
Highland Park 12 Year Old, known as "Viking Honour," is a single malt Scotch whisky that is celebrated for its balanced flavor profile. This whisky is matured predominantly in European and American sherry-seasoned oak casks, which contributes to its distinctive characteristics.
