Heldervue Chardonnay

Charred line fish with lemon butter, roast chicken with thyme, or creamy mushroom risotto. Fresh enough to cut through richness, textured enough for open flames, sea salt & slow afternoons.

The vineyard's proximity to the ocean & the consistent cooling effect of the South-Easterly wind is fundamental to this wine's structure. By moderating canopy temperatures, these maritime breezes allow for a slow ripening process that preserves the wine's vibrant 7.0 g/l acidity. The granite soils & clay-rich sub-soil provide a distinct mineral richness & structural depth, resulting in a lean, elegant, & site-specific expression of Stellenbosch Chardonnay.

10 months in French Oak. 15% New; 85% 3rd & 4th fill.

100% Natural fermentation in barrel. 15% partial MLF. No battonage (preserving tension and clarity).
