Hand picked from selected parcels within 3 different blocks. Fermented in open top tanks - a combination of punch downs and pumpovers were used to gain optimal extraction. Left of the skins for 28 days and then pressed into barrel. Malolactic fermentation occurred in barrel and the wine was left without any SO for 3 months.
