The Sadie's two wines Columella and Palladius originate in the soils in the Swartland region which stretches north of Cape Town between Durbanville and Piketberg inland from the Atlantic Ocean and centered on the town of Malmesbury. Importantly the area has a remarkably stable climate allowing a consistent level of quality each year in subtly different vintage conditions.

"One of the most fascinating aspects of Cinsaut is the depth of texture and the load of tannin that this big berry grape holds, for as a norm one will expect this level of depth and texture and tannin on the smaller, berries varietals β but Cinsaut is a complete enigma in this regard. The wine may hold massive volumes of bright-red fruit and lifted aromatics; and upon smelling the wine the expectation is that it would be very soft on the pallet β but then firm tannins are met. This 2025 Pofadder is potentially one of our best bottlings ever. The wine displays the usual strawberry-red fruit flavours, but then secondary spicy, peppery, and aromatic notes, along with violets, fill the glass, and all this carries into the wineβs mouthfeel, building into an incredible, complex bottling from this site.
