1974 Old Bush Vine Chenin Blanc

The perfect companion to most meat dishes, but can also be enjoyed with spicy food and salads.

Planted 1974, Agter Paarl, Dry Land, Bushvine. Soil: Weathered Malmesbury shale, small koffie klip stones. Aspect: Eastern facing slope

Handpicked between 21 and 23 Degrees Balling. The first pick for higher natural acidity to add structure and length, second pick to add texture and mouthfeel. The grapes are crushed and pressed overnight; barrel fermented in older oak. Extended ageing on fine lees. The two fractions are kept apart, before bottling followed by rigorous barrel selection.
