The Mullineux Olerasay 5º Straw Wine offers an extraordinary combination of richness, vibrancy and freshness. Aromas of sun-dried apricots, fynbos honey and salted marzipan rise from the glass, leading to an intensely concentrated yet finely balanced palate. Layers of sweet, ripe fruit are lifted by remarkable acidity, ensuring that the wine remains fresh and energetic despite its luscious sweetness. The finish is exceptionally long and zesty, a hallmark of its complex solera blend spanning seventeen vintages from 2008 to 2024. The overall impression is both decadent and moreish, with seamless integration of fruit, acidity and texture.

Grapes are harvested at normal ripeness and dried outdoors in breezy conditions for several weeks to concentrate sugars and flavours while retaining acidity. Once dried, the grapes are crushed and gently pressed into 225-litre barrels for a long, slow, natural fermentation that typically lasts 8 to 12 months. While a portion of straw wine is bottled annually as a vintage release, select barrels are incorporated into a complex fractional solera system begun in 2008. The Olerasay 5º is composed of wines from all vintages between 2008 and 2024, creating remarkable complexity and integration.

The Chenin Blanc grapes are sourced from old bush vines rooted in decomposed granite soils high on the slopes of the Paardeberg in the Swartland. These dryland vineyards are selected for their natural ability to produce fruit with vibrant acidity, layered flavour and firm structure—qualities essential for a balanced straw wine. Yields before drying average between 4 and 6 tons per hectare (24 to 33 hl/ha). After the desiccation process, post-drying recovery ranges from 10 to 20%, equating to only 2.4 to 6.6 hl/ha.
