Vineyard Selection Cabernet Sauvignon

Fruit is sourced from selected parcels across Stellenbosch, with most vineyards rooted in ferricrete soils locally known as koffieklip. The 2023 season was warm and dry overall, with heatwaves in January followed by late-season storms and intermittent rain.

Matured for 20 months in French oak barrels, using 26% new oak, 14% second-fill and 60% older oak before final blending.

Each vineyard block was harvested at optimum ripeness and vinified separately. After destemming, fermentation took place in stainless-steel tanks and traditional open-top fermenters, with pump-overs and punch-downs used for extraction before gentle pressing.

Kleine Zalze wines are marked by a classical structure and complexity matched by a vibrant flavour intensity. Discernibly South African in style, they are refreshing, beautifully balanced and well-suited to food. Our wines are made according to traditional methods with minimal cellar intervention, but supported by modern equipment.
