The 2024 fruit combines Chardonnay from limestone-rich soils in Robertson with Pinot Noir from cooler False Bay slopes in Stellenbosch. Moderate conditions and steady ripening supported freshness and varietal expression.

The wine matured on fine lees during second fermentation in bottle before disgorgement and dosage. The current 2024 producer page does not state the exact lees-maturation period.

Fruit was hand-harvested and whole-bunch pressed, with each parcel vinified separately in stainless steel. Grapes were picked at 17 to 19° Balling. Malolactic fermentation was completed before assemblage, followed by traditional second fermentation in bottle.

Kleine Zalze wines are marked by a classical structure and complexity matched by a vibrant flavour intensity. Discernibly South African in style, they are refreshing, beautifully balanced and well-suited to food. Our wines are made according to traditional methods with minimal cellar intervention, but supported by modern equipment.
