Bacio del Sole

This medium-bodied white wine is best enjoyed well chilled on its own or with a variety of complementary dishes, including garlic mussels in white wine, seared white fish with lemon and capers, pork with fennel, and seafood pasta.

Our 1-hectare, single-vineyard, IPW-certified Rolle block on Bacco Estate was planted in 2018 and continues to produce exceptional fruit as the vines mature. Pruned using the Guyot system, the vineyard is carefully managed to ensure balanced growth and even ripening. The 2026 vintage delivered outstanding quality despite hot, windy conditions. The grapes were hand-harvested in small crates during the cool early morning hours and picked in two stages: the first on 11 February for concentrated, sun-ripened fruit, and the second a few weeks later from a denser canopy, producing larger bunches with impressive freshness. The grapes were cooled immediately before processing.

The wine spent 4 months in neutral oak before being bottled on 3 July 2026.

After overnight cold storage, the grapes were hand-sorted and de-stemmed. The first-harvested batch was lightly crushed before undergoing 12 hours of skin maceration to extract maximum flavour. After the maceration period, the grapes were pressed and the juice pumped into stainless steel tanks to settle for 24 hours before being transferred into old 300-litre barrels for natural fermentation. The second-harvested batch of grapes was pressed immediately after sorting and destemming, without any maceration time, and the goal was to maintain the bright acidity and vibrancy. The juice was allowed to settle in stainless steel tank before being transferred into old 300-litre French oak barrels for fermentation. Once in barrel, both lots underwent alcoholic fermentation with native yeasts, and partial malolactic fermentation was done on the wines in order to retain some freshness.

Long inspired by the opulence of the Super Tuscan region, Nathan dreamt of bringing this holistic, experiential brand of luxury to South African wine lovers. A dream that has now become a magnificent reality.
