Tasting Notes:

Bright red centre with a deep brick red edge. Balanced and structured wine show aromas of black currant, fynbos/garrique, oak and hints of mocha. Lively palate shows silky soft ripe tannins with cream and black berries.





Waverley Hills wines are organically certified by ECOCERT, based in France, but conducts inspections in over 80 countries making it one of the largest organic certification organizations in the world. They stipulate that no synthetic fertilizers, pesticides or herbicides may be used, in order to protect the environment and to produce grapes and olives as environmentally-friendly and healthy as possible.

Oakleaf soils, with drip irrigation delivering a production of 6 tons/ha.

All the components were fermented separately in stainless steel tanks at about 24 degrees Celsius, with a preceding cold soaking period of 5 days at 10 degrees Celsius.

Wines underwent separate malolactic fermentation and maturation for 5 months in 100% French oak, second fill barrels. The wines were then blended and underwent another 10 months maturation in French oak barrels of which 50% were new and 50% second fill.
