Tasting Notes:

Superbly delicate and intricate on the nose with perfumed aromatics of jasmine petals and whimsical minerality reflecting our distinctive terroir. A wine of finesse, beauty and old world romance with elegant pure fruit flavours of green melon and kiwi, subtle blackcurrant leaf and a hint of fennel. Stylistically hand crafted in a mineral driven style, with perfect mid palate structure showcasing both texture and depth culminating in a fresh, lingering finish. This wine is a sublime complement to fine dining dishes.

    Sauvignon Blanc pairs well with briny, sour cheeses such as Goat's milk cheese, yogurt and Crème fraîche. It is also well matched with white meats such as chicken, salmon, sea bass and crab.

An expression of sophistication, elegance, purity and complexity that entices. A reflection of nature in each glass. The grapes for this wine were sourced from our high lying Sauvignon Blanc vineyards situated at 620 metres above sea level. The exceptional delicate flavours of select parcels deemed them worthy of being released as Sing-a-Wing Sauvignon Blanc. This wine tells the story of a loving couple and the term of endearment shared between them, Sing-a-Wing. The poem written by O.T.V. Senior to his wife, Margaret, on the occasion of their 25th wedding anniversary, is shared on the back label of this Sauvignon Blanc.

Leaf fall occurred at the normal time which allowed good reserves to build up. Winter started late with warmer day and night temperatures and lower rainfall than in the 2016 growing season. A warm spring resulted in early, however uniform budding. A cool yet dry and windy November/December resulted in drier soils and small berries. January rains moistened soils and cool evening temperatures allowed for slower ripening of our grapes.
