Tasting Notes:

The Thelema Rabelais 2014 shows classic Cabernet Sauvignon characteristics of black fruit, pine needles and pencil-shavings with earthy, fynbos-driven nuances. This is off-set by the perfume and succulence from the Petit Verdot component, making for a superb expression of classically inspired red wine excellence.

According to Thelema winemaker Rudi Schultz the Rabelais blend of Cabernet Sauvignon and Petit Verdot represents the finest fruit selection and terroir expression from this venerable Stellenbosch estate on the slopes of the renowned Simonsberg.

The 2014 vintage was a cool vintage with ideal growing conditions, the grapes for Rabelais were picked between 12 and 16 March at a balling of 25 – 25.5.

After de-stalking and sorting, the fruit was crushed and given a cold-soak for two days. Spontaneous fermentation was done over five days with pump-overs, twice daily. Once fermentation had completed, the wine was left on the skins for two days before pressing and racking to barrel for malolactic fermentation.

Aged in 100% new 36 month dried, extra tight grain French oak barrels for 18 months.
