Referred to as "the Devil's wine" in early Abbeys it was actually Dom Pérignon who first devised a way to prevent cellared wines from exploding, calling it the Méthode Champenoise. He also preferred using red grape varietals to make the wine, insisting that they are more flavourful than other white grape varietals - which naturally resulted in rosé Champagne.
