Tasting Notes:

Inviting flint and mineral aromas with fresh lemon blossom and grapefruit nuances. A delicate composition of lemongrass and subtle, lightly roasted macadamia nut. Polished pallet with a smooth textured mouthfeel.

To produce the finest quality wine, meticulous attention is given to vineyard and cellar practices. Preserving the grapes at their optimal state prior to initiating the winemaking process is truly one of the great secrets of producing exceptional wine.

The grapes were hand- picked from beginning to end of February 2016. The average yield was 8 tons per hectare.

After whole- cluster pressing only the free- run juice was used. 15% was fermented and matured in concrete tanks. The remainder of the juice was fermented in stainless steel tanks and 300 litre French oak barrels.

Maturation in 300 litre French oak barrels for 10 months, of which one third were new barrels.

Food pairing

Recommended with seared scallops on a bed of lemon and herb risotto.
