Tasting Notes:

Having enjoyed many SA ‘Cabernet Sauvignons’ from the 1960’s and 1970’s I was enthralled to discover that many of these old gems included a far greater percentage of Cinsault than Cabernet such was the shortage of Cabernet Sauvignon vines in production at the time. The laws legislating label declarations conveniently allowing these wines to be labelled and sold as Cabernet Sauvignon. Old School has a lifted, feisty orange zest driven bouquet with light kirsch-like aromas. The palate is medium-bodied with a soft dark cherry and white pepper tinged entry, smooth and balance.

Raised by Wolves is the brainchild of Adam Mason, winemaker at Mulderbosch Vineyards. The name is a parody of the constant one-upmanship of winemakers: "My wine is a single vineyard." ... "Yeah, well my wine is naturally fermented." ... "Oh yeah, well my wine is hand sorted by berry." And Adam's response: "Well my wines are all of the above, and I was raised by wolves."

2/3 Rustenhof Cinsaut, 1/3 Bonniemile Cabernet Sauvignon, Stellenbosch. Growers - Rustenhof: Pieter Bredell; Bonniemile: Deon Joubert

Vinification of both varieties was carried out in separate concrete ‘kuipe’.

Matured 18 months in barrel.

Food pairing

White beans, duck confit, garlic sausage and smoky streaked bacon.
