Tasting Notes:

Fruit aromas of white peach, litchi and pear. Fruit-forwardness follows on the palate with an abundance of fresh lemon, limes and green apple complimented by good textural viscosity and weight. Its linear acidity cleanses the palate, keeping the natural sugars (15g/l) in perfect balance creating a brilliantly refreshing wine.

During 1898, the year in which Sir Antonie Viljoen purchased Oak Valley, plans were underway to build pioneering railway from Sir Lowry's Pass to Caledon. Elgin existed in isolation until the track opened in 1902. The line was chiselled out of the solid rock to conquer Sir Lowry's Pass, the steepest gradient in the country and so this solid stell on quarried stone would inspire an era of prosperity in Elgin. The era of Stone and Steel.

We aim to produce a Germanic style Riesling by keeping the canopies nice and bushy (think bad hair day). The two prevailing winds hammer this block from both ends resulting in low yield and a staggered approach to ripening. By allowing the fruit to hang longer on the vine we are awardede with a wine that has an array of ripe flavours.

Bunches are hand sorted, de-stemmed, crushed and then undergo a period of skin contact in tank to enhance flavour extraction before going through a gentle pressing cycle. The juice is clarified before initiating fermentation. Tank fermentation occurs at a cool 10-14°C until the decision is taken to arrest fermentation based on a thorough sensory evaluation.

The wine is left on the gross lees for ±10 weeks.
