A Chardonnay Straw wine, oh how they chuckled. It was said that it could not be done. That is was a fools errand. That it was just the kind of pursuit that could easily drive a sane winemaker right into the loving embrace of a straight-jacket. But, in our eternal quest to better understand this noble cultivar, we set out failing to heed the many, many, many warnings. The result is a superbly structured Chardonnay straw wine. No saccharine sweetness or high alcohols. This baby cruises in at a low flying 11% making it the perfect post-meal-accompaniment.

The Fudge is our Chardonnay straw wine produced from naturally desiccated grapes on the vine. During ripening, we break or pinch the stems of the bunch to cut off the translocation of water. This occurs when grapes have reached optimal acidity. This process takes just over a month for the grapes to dry and raisin.

Once harvested the grapes are de-stalked and allowed to soak overnight in the press. The dried stalksare added back to the press to increase the juice extraction. The first free run of juice is thrown out and only the "syrup" juice collected. Fermentation is spontaneous and occurs on the gross lees. The ferment stops naturally.

The wine is matured in 228L barrels for 12 months.
