Tasting Notes:

A youthful but complex concentrated fruit wine. Layers of different red and black berries with hints of smoky spice, and dark-toned fruit. Although rich and succulent, silky polished tannins provide structure and an elegant lingering finish which will develop well in the bottle up until 2025. The Griffin is an example of an excellent vintage.

The Griffin is a mythical creature symbolising divine power. This is a unique product in our range, one that is unlike many of the wines you would have tasted before it. Having undergone 30% Carbonic Maceration, this Syrah underwent the usual Journey’s End precision treatment. A delightfully fruity nose, follows through into a complex but soft palate. The Griffin is a part of the Gabb’s Welsh heritage, and can be found on the Gabb family’s crest.

The grapes were handpicked at midday to ensure warm temperatures which initiate the carbonic fermentation.

The whole bunches were then put into a fermenting tank and the tank was impregnated with carbon dioxide gas. The fermentation happens naturally inside the grape berries which slowly releases wine with very low tannin extraction and intense fruity aromatics.

After two weeks, the skins were pressed and the wine was put into 30% new American oak and 30% French oak barrels for a total of 18 months. After final blending, the wine was filtered before being bottled. Only seven barrels of this wine was made.

Food pairing

Best served with rich Roast duck or Pork dishes, beef steak or lamb cutlets.
