Tasting Notes:

Deep, warm Baltic amber hue in colour, with honeycomb, Mandarin orange and litchi on the nose. This stately ripasso style wine is in perfect harmony of vinous sweetness, fresh acidity and surprising tannins.

In the 18th century, a local Paarl doctor, Dr. A. L. de Jager, arguably Bloemcool’s greatest advocate, would prescribe Bloemkoolfontein wines for a range of ailments. This wine is made to soothe the most demanding palates.

Fresh fermenting Chenin Blanc was "re-passed" and allowed to ferment for 4 days on the skins of pressed straw wine (Chenin and Muscat) in a white wine version of the Italian Ripasso style used in Ripasso Della Valpolicella DOC wines. After 4 days on the skins the grapes were basket pressed and fermentation continued in 3rd fill French oak barrels for several months.

The wine was aged for 8 months in barrels prior to a light filtration and bottling.
