Located up against the rugged slopes of the Witzenberg Mountain range, Fable focuses on producing pure expressions of Rhône varieties. Our isolated farm is high up on the edge of a Wilderness Nature Reserve. It is here at elevations from 400-650m that we have 32 hectares of Syrah, Mourvèdre and Grenache noir.

All the fruit is hand-harvested and cooled overnight in the cold room.

The grapes are pressed in to a settling tank and the presssed juice is allowed to settle for 24 hours. the wine is then racked off the heavy sediment to 500l oak barrels or concrete eggs. Natural fermentation is allowed to take place.

Maturation lasts 6 months, no new oak, older / neutral french barrels.

Food pairing

Tapenade or a salade Niçoise, a paella or grilled chicken.
