"Discreet wood frames somber dark berry fruit aromas that are liberally laced with earth, humus, game and smoke nuances. There is excellent richness and intensity to the round and silky-textured flavors that display good energy before terminating in a solidly complex and impressively persistent finish where a hint of bitterness is present. The supporting structure seems sufficiently ripe and as such my score offers the benefit of the doubt that the bitterness is simply a post-bottling phase." AM

Located in the village of Morey St Denis, Domaine Taupenot-Merme is now run by the 7th generation, Romain and Virginie Taupenot. The Domaine is spread quite widely throughout the Cote, boasting 13 hectares of vines over 20 appellations, striking a good balance between Grand Cru, Premiers Cru and Village wines. The wines produced by Taupenot-Merme in 2015 outperformed most of their peers at all quality levels.

The grapes are sorted on a table de tri, completely destemmed and then given a cool soak at 10ºC, fermented for seven to nine days then maintained in the vat at 29ºC for a few more days to manage the tannins.

Ageing is between 12 to 14 months on fine lees and no racking, with Grand Cru wines seeing 40% new oak.

Food pairing

Pair with thickly cut rib steak or soft-centred cheeses.
