Tasting Notes:

This wine is very fresh and young with nice lemon characteristics. The color is of a pale green gold. The tiny bubbles are charming and continue on the palate providing length and flavours of acacia honey and white flowers. Definite minerality and a pleasant saline character.

In 1947 with his 2 sons Jacques and Jean-Guy he created the brand Champagne Jacquinot et Fils. The family business was set up in the Epernay cellar. Jacques Jacquinot looked after sales and Jean-Guy developed the vineyard which today covers 17 ha and makes wines of the highest quality.

The 3 Champagne grape varieties are grown on the estate: Chardonnay, Pinot Noir and Pinot Meunier. The growth cycle takes place throughout the season under the control of our technicians who are the quality controllers of our grapes.

The clear juice is refrigerated and brought into the Epernay winery to start the wine making. The alcoholic fermentation begins in temperature controlled tanks to reveal the subtle aromas of our grapes. After cold stabilisation and filtration, bottling (Tirage) is done during the last week of March.

The wines have had time to rest after cold stabilisation. The wine is then riddled and disgorged once the Champagne cannot mature any further.

Food pairing

Serve with freshly shucked oysters or pan seared scallops.
