Tasting Notes:

The intensely flavoured, small berries were carefully hand sorted to give the finest expression of the terroir. Smooth and dense, with a crushed velvet mouth feel, Skyfall is bold and fresh, with well-structured tannins and excellent ageing potential. The wine spent 18 months in French oak, 70% of which was new.

The boutique private cellar produces three main cultivars, Sauvignon Blanc (3.23ha), Chardonnay (2.96ha) and Cabernet Sauvignon (12ha). The white cultivars are planted on the higher North and North East facing slopes while the red grows on the slightly lower foothills. High altitude viticulture with elevations up to 550m above sea level combined with extreme slopes of up to 45 degrees requires that they tend to the vines by hand. Wine making is a craft after all. Soils consist mostly of high potential deep red, well-drained soils on the mid slopes with red, stony soils on the higher slopes.

As the name Skyfall alludes, the 18-year-old Cabernet Sauvignon vines drift down from the Banhoek skyline. The exquisite individual pockets reach up to 500m above sea level. Cabernet Sauvignon makes up 70% of the vines planted on the estate. It has taken years of care, to coax the absolute best ‘personality’ from the diverse parcels of vines. Each block is individually pruned and cared for to encourage character development, then separately harvested and vinified. After time in barrel, the team creates a blend of the best Cabernet Sauvignon to express the ‘fingerprint of the harvest’.

There are eight Cabernet Sauvignon blocks on the Bartinney estate. Each batch is vinified and matured separately. The best blocks are carefully blended and matured separately, as our reserve Skyfall Cabernet Sauvignon.

Fermentation lasts up to 14 days and then a further maceration period commences before the must is pressed and moved to oak. 70% new French Oak and 30% second fill French oak was used to mature this Cabernet Sauvignon for 18 months.

Food pairing

This wine calls for some serious food. Roasted lamb dishes or a fabulous Beef Bourguignon will pair nicely with this classic Cabernet.
